On the menu are a burrata and duck prosciutto salad with baby greens, pickled blackberries, shaved fennel, and puffed wild rice, with a maple-mustard vinaigrette. There are two choices for the main course: braised beef shank with cedar-smoked roast potatoes, apple-glazed baby carrots, wild and cultivated mushrooms, and crispy shallots; or braised eggplant and chickpeas with turmeric rice, harissa-scented vegan yoghurt, and toasted pine nuts. Dessert is a blueberry maple pecan crunch with baked mousse, pecan crisp, maple whisky gel, blueberry sauce, and maple whisky ganache.
Wine pairings are by Mission Hill Family Estate Winery, while there’s a whisky tasting courtesy The Dalmore, a Scottish distillery.
Regular tickets are $199 plus taxes and gratuity. Special dinner-seating options include the chance to sit with Collins on July 12 and 26 and August 23, or with Kiriko Watanabe, the Gail & Stephen A. Jarislowsky Curator, on August 9 for $230 plus taxes and gratuity.
